Indianapolis — Indianapolis-based mall owner Simon Property Group has unveiled plans to invest more than $250 million for the redevelopment of The Mall at Green Hills in Nashville, Cherry Creek Shopping Center in Denver and International Plaza in Tampa. Seattle — At its recent 2026 Investor Day, Starbucks Coffee Co. highlighted progress in its “Back to Starbucks” transformation plan. By fiscal 2028, the company expects to open 2,000 net new stores across its portfolio, including approximately 400 net new U.S. company-operated stores. Shopoff Realty Investments Acquires Remaining Balance of Westminster Mall in California for Mixed-Use Redevelopment Project
Westminster, Calif. — Shopoff Realty Investments has acquired the remainder of the Westminster Mall, totaling an additional 57.5 acres, ahead of its planned mixed-use redevelopment, Bolsa Pacific at Westminster. Washington Pacific Group was the seller. Lee Aarons of Land Advisors represented the buyer in the deal. Shopoff previously purchased the mall’s 14.1-acre former Sears parcel in July 2022 and the 11.7-acre Macy’s parcel in August 2022. St. Louis and Columbia, Mo. — Zaxby’s has signed a franchise agreement with Triple Z Holdings LLC to open seven new restaurants in Missouri. The development plan builds on various multi-unit franchise deals in the Midwest, including locations in Illinois and Ohio. Zaxby’s recently unveiled its newest restaurant in Chicago on Jan. 9, with more openings expected to follow. Frisco, Texas — College Station, Texas-based Layne’s Chicken Fingers closed out 2025 with 40 restaurants and 10 new franchise owners in the system, with plans to open a total of 300 units by 2030. Layne’s growth included a 44-unit agreement, a 15-unit expansion by Wisconsin franchise owners and agreements signed by franchisees of other major brands like Wendy’s and Arby’s. Meanwhile, Layne’s posted a 50 percent year-over-year unit increase and a 67 percent increase in systemwide sales, with 2024 systemwide revenue reaching $30 million.
